[nzlug] update: no dns - no more problem.

You can switch using aptitude - something along the lines of "sudo
aptitude install xubuntu" will install xubuntu. I wouldn't worry about
having installed ubuntu server first. It seems to install a
minimalistic copy of Ubuntu that can be added to with ease. There's
very little you could or should take out.
