Let me add some more to that, too:

* MediaWiki
  * Can be quite slow on some shared servers, but scales well when
    the appropriate hardware is thrown onto it.
  * Has got problems (or rather: is unelegant) when wanting to upload
    files *other* than images.
  * Runs on mod_php
  * Stores in (MySQL) DB
* MoinMoin
  * Very flexible, good features.
  * Quite fast
  * Very well and easily extendable
  * Runs on desktop, CGI or mod_python
  * Flat file based storage
* PmWiki
  * Very simple and easy, very clean
  * Quite fast, very clean implementation
  * Not very extendable, a bit limited in features
  * Runs on mod_php
  * Flat file based storage
* Trac
  * THE solution for integration with a S/W development team
  * Integrates Subversion browser with all bells and whistles
  * Includes bug tracking, mile stone management, etc.
  * Runs on CGI or mod_python
  * Flat file based storage

These are the four I mostly recommend, depending on the purpose of the use 
case. Mostly I prefer personally MoinMoin. PmWiki is the easy entry solution, 
MediaWiki is for the one who *knows* they mostly/only want to do text and 
images, and their server has got enough grunt. Trac is a bit on the side, but 
it's very good for its features. I often run it in conjunction with MoinMoin 
for the more sophisticated wiki features.
