Personally, I wouldn't recommend dual boot - it's horribly inconvenient 
and increases the complexity of your setup markedly.  Instead, you could 
use the free VMWare server edition or some other virtualisation system 
if you want to use both.  I recommend using the more stable platform as 
the VM host (i.e. Linux).  Unless, of course, you're wanting Windows for 
games, in which case, why bother RAIDing the Windows part?  Just use 
software RAID on the Linux drives.
