It would basically just let you keep running during/after a disk
crash, and let you replace the disk at your leisure. And it would stop
a disk crash from trashing any work you'd done since your last backup.
But as you're aware, it isn't a backup and there are still plenty of
other ways of losing data that RAID doesn't protect you from.
It would also create a bit more heat and noise though.
