I missed this earlier,

Using irl.cri.nz from outside of the irl.cri.nz world will likely cause 
problems.

I suggest, if its a personal-use system, that your personal email address 
(and not one tied to your employer, especially one associated with the 
Government), would be the best plan.

But there is no excuse for not using a real, valid domain name.


That all said,

I assumed that the problem you described originally was that the from: 
address that 'mail' was using had infact changed.  The other possibility 
is that irl.cri.nz have upped their degree of inbound mail checking (not 
necessarily SPF, though it could be associated with that) and stopped 
accepting invalid domain names.

If the former the the problem is sending-side, and nothing to do with the 
irl.cri.nz mail config (which isnt doing anything wrong).
