[nzlug] Best approach for remote-admin of a Debian box

I set my uncle up with a basic Debian desktop for browser/mail and left 
him to it with minimal service callouts.  It would be cool to give 
occasional assistance without driving there, and I am wondering what is 
the most preferred and secure approach, given Telecom adsl with no fixed 
  IP, and Debian at both ends.

Googled several alternatives, but would prefer an X session rather than 
VNC.  Anybody seen a good how-to for this recently?  Which is the most 
secure way to do this?
