Would it be possible to do a very slim server version?

I don't like the way that a lot of the distro's come with everything I 
don't want, and little of what I do.  I've been looking to swap to 
something like Ubuntu for server use for a while, but want such a basic 
install that only includes the base system, package manager and utils 
that can't possibly be lived without (ie SSH, etc).

Then to be able to configure the server have on it what I want to run 
which is especially handy for a single use server (ie a webserver, 
another for file, and another for email).  I really like the idea of 
installing only the services I want, and none of the ones I don't 
(unless of course they are dependent).

This is what I like most about Gentoo as it is such a basic install, but 
can be made to do anything.  I would like something similar from another 
distro, but without having to do the compile from scratch method for 
every package, especially since some of the server's I would be looking 
to run this on are older and compiling takes an age.

Any ideas on this, or even if something like this already exists?
