The basic semi-manual scenario would be :-

Let each machine startup with X (with or without a desktop, your
choice) - this will appear on your big displays, and a VNC server.

>From the server, run a VNC client, and take over each PC display in
turn, changing the display to be whatever you want.

For more advanced stuff, let each machine startup X with no desktop,
and a kiosk-mode web browser, pointing at a unique URL on the server.
Do whatever you want from that URL, with perhaps JavaScript to force
the page to load different stuff as time goes on.
