Thanks everyone,
Mark was exactly right. I was trying to check the server doing his strut
but doing so from inside the firewall on the same LAN (actually from the
server system for this test).

So the lesson learned here:
The NAT will (normally) not hand over the traffic coming from an
internal IP back inside but 'simulating' traffic coming from the outside.
Once I realised my mistake the obvious test to make sure my server is
actually serving the pages to the Internet is simple:
I SSH'ed to my server in Auckland and used "lynx <externalIP>:8080" and bingo!
