sudo apt-get install ubuntu-desktop will install all the packages that
would have been installed had you used the usual Ubuntu CD (include
Gnome, FF, OpenOffice and of course the X.org server)

You'll probably find that in the universe part of the Ubuntu
repository. Edit /etc/apt/sources.list, and remove the comments from
the lines that refer to universe (and probably multiverse at the same
time).
