I use both Ubuntu and Debian stable on small servers, and Ubuntu on my
desktop, here are my thoughts.

Debian stable is great as a set-and-forget machine. I have it set to
auto-check for updates and email me if there are any, otherwise I pretty
much don't have to touch it (and updates are pretty rare). The nice thing
about Ubuntu on the server is that the software is quite current, there's
little hassle installing something and knowing you're going to have a
recent version of it. I used to run Debian testing on the desktop, but
didn't like it much for that. A few things didn't work without hacking,
and updates would occasionally cause breakage. Ubuntu on the desktop I've
found to be very nice. Everything that you'd expect works straight away,
and it has a good community to help if you want to do something a bit
different to the norm.
