I second mondo (again...)
Curses interface - or just script it to do a full backup to CD/DVD(s) or
a CD/DVD iso file(s). You can just pop a disk in, and it will pop out
when complete with a bootable, bzip'd backup of the whole server, or
just whatever you want to backup. Pop another disk in ready for the next
day's crontab. You could possibly get the script to run immediately,
every time you put a disk in (don't ask me how...!) or wrap in in an
html page or something.
I create bootable ISOs then move them over nfs to another server. I
burn a few to disks when I get time and store them offsite.
