Because XMPP is better[0], easily as open (if not moreso), already used for
the instant-messaging side of things, and integratable with the Jabber
network.

They did release libjingle to interface with it, however adding voice support
to a previously non-voice client isn't a trivial task. I know Psi (the XMPP
client I use) is going to be getting it, and I think kopete is too. Don't
know about Gaim.
