Since my last reboot (blasted Skype again) my anti-aliasing has gone
from any font I select for message display in Evolution.

KDE Has anti-aliasing turned on, and text in HTML messages and the
composer is anti-aliased. Just not the message view.

Is there some GNOME-specific setting that KDE users don't see required
or something?

If I enable the use of the same fonts as other applications, it is
anti-aliased. But the font is then half the size and I can't read the
damn thing.
