That should be (postfix + dovecot) + spamassassin [ + clamav] :-)
And squirrelmail for the inevitable webmail interface?

However, that's not going to address the wider issue of how you manage
your mail user accounts (do they *really* want to be unix users too?,
which is the default).

So perhaps a "messaging suite" like zimbra might be more appropriate?
