my 2c:

MTA: Exim or Postfix (Exim is Debian's default iirc, postfix is Ubuntu's)
Mail: Dovecot (IMAP & POP, Maildir store, It Just Works)
AV: ClamAV
Spam: SpamAssasin

There are a number of tutorials around on setting up all of those - 
especially on getting the MTA,AV,and Spam working together, which is the 
slightly more complex bit. See howtoforge.com and google.
