Ah, that's not nearly so dangerous. Just make sure that port 25 isn't open to 
the Internet and as long as the Ubuntu box is behind a stateful firewall it 
should be able to send mail out without too much trouble.

As for which package to install, I'm not sure what the preferred is for Ubuntu 
but you could use either Exim or Postfix or, if you have the universe 
repository enabled you could try out ssmtp. ssmtp is a sending only mail 
server which will just forward your mail to a smarthost - which in this case 
is exactly what you want.

I'm sure someone more knowledgeable in the ways of mail servers on Ubuntu can 
chime in here and offer their opinion.
