Hi Sid,

Do you really need to provide ftp access? If it's just for your own use, or 
you can tell people what to use, then I would recommend using SFTP over FTP. 
FTP is an insecure protocol and you'd do much better only using secure things 
on your server. For SFTP all you need is SSH access - too easy, and one less 
port to worry about too!

As for mail servers, it's personal preference really. I like postfix myself.
