Over a LAN, X should be quite satisfactory. XDMCP is the protocol that asks 
for machines running X, and sorts out bringing up a login box (loosly

You shouldn't need the XServer running on the Ubuntu box, although I don't 
know how to get XDMCP without it (afaik, (G|K|X)DM usually provides it). You 
may be able to tell them to not turn on graphics or something. You do need an 
XServer running on the WinXP machine, as that provides the graphics. (Keep in 
mind that the server/client terminology seems backwards at first glance when 
dealing with X. It does make sense if you look at who is providing the 
service though)
