[nzlug] How to switch from desktop mode to server mode?

Because desktop mode uses much more resources, but I want to still use
desktop mode from time to time.

What is the command to turn off the desktop? I'm using Ubuntu, so I
think its Gnome instead of X? Sorry I'm new to linux.
