Have a look in your Control Center under the KDE Components -> File
Associations. By the sounds of it Google Earth has been added to
"all->all" or "all->allfiles".

As for text files etc, I'm not sure. Normally in the File Associations
you can remove the top one, provided it's not hard-coded, else then you
can order it down the list.

Other than this, I have no idea. I installed Google Earth manually and
it's not associated with any files at all ~ however I use Gentoo which I
presume you are not using.

Another quick fix is going through that "Open With" menu, then selecting
"other", clicking the application and ticking the "Remember application
association for this type of file".
