Try just using any existing email address that you want replies to be
sent to. What's important is not that there's a valid domain name on
it, but that it's actually valid reply to address. It shouldn't matter if the
email is hosted by the server you sent the mail with or not.
if you want your mails sent to that server and it's configured to receive
as well as send,  then you should be able to use the IP for that
