That is precisely what the "Server" version of Ubuntu is: a system
designed to run services without any GUI install. However, this is
pleasantly easy to solve:
Log in, and run the command as root -- using sudo, typically:
aptitude install ubuntu-desktop
That will install all the standard components of a graphical Ubuntu
desktop for you, giving you all the GUI stuff you expected. You can
still run services, etc, as well.
Alternately, grab an Ubuntu or KUbuntu disc, not the "server" flavour,
and that will install the GUI by default.
