As others have said, your problems began slightly earlier than that.
Ubuntu uses sudo from the first user account to mediate access to root;
you shouldn't ever need to assign a password to root directly.
Did you actually try using sudo, or did you start directly with trying
to log in as root?

Correct. Ubuntu policy -- server or not -- is that there will be no
open ports on a default installation, so all of those daemons are not
installed by default.

Did you mount the DVD at all? If so, where, and what (if any) messages
did the kernel display about the content during the mounting process?
