I run mondo on multiple machines, and script it to automatically produce 
full, bootable, bzip compressed DVD iso backup sets of each server.  It 
has a nice curses interface too for use on the fly for CD/DVD or nfs 
mount backups.

Development was stagnant for a time, but has recently taken off again 
meaning it works on recent distros which it wouldn't for a while.

Look up backup-kungfu also for an easy script/config file set for 
crontab use of mondo.
